01 · Texture
The center is the point.
A larger portion gives the outside time to brown while the center remains tender. Resting matters, too: the cookie continues to settle after leaving the oven, developing structure without losing softness.
Field note No. 003 · Cookies
A substantial bakery cookie can hold crisp edges, a soft center, and enough chocolate to make every bite count. Scale changes the experience.

01 · Texture

02 · Chocolate
Bread Barn’s Triple Chip cookie combines butterscotch, milk-chocolate, and white-chocolate chips for three distinct layers of sweetness and melt. Double Chocolate turns the dough itself toward cocoa, while White Chocolate Macadamia adds a buttery crunch.
03 · Keeping
Keep bakery cookies tightly covered at room temperature for short storage. Freeze extras while they are fresh, then thaw covered. A few seconds of gentle warmth can bring the center back to life.

What you’ll need
The method
Beat the butter and both sugars until smooth and slightly lightened, about 2 minutes. Beat in the egg and vanilla.
Whisk the flour, baking soda, and salt separately. Fold the dry mixture into the butter mixture just until combined, then fold in the chocolate and optional nuts.
Cover and chill the dough for at least 30 minutes. Meanwhile, heat the oven to 350°F and line a baking sheet.
Scoop 2-tablespoon portions about 2 inches apart. Bake 10–12 minutes, until the edges are golden but the centers still look slightly soft. Rest on the pan for 5 minutes before moving to a rack.
